Pizza Balls

Ingredients:
4 soft rolls
4 tomatoes
2oz cheese grated
You could mix in some lightly grilled bacon.
Method:
• Cut and slice off the tops of the rolls. Scoop out and discard middles.
• Slice tomatoes thinly, arrange in the centre of the rolls and sprinkle with cheese
• Place on a baking tray and bake at the top of a fairly hot oven (440°f - gas mark 6) for 15-20 minutes, until the cheese has melted and rolls are hot.
Weetabix Cake

Ingredients:
2oz Weetabix (crumbled)
6oz sultanas or mixed fruit
6oz sugar
1/2 pint of milk
1 egg
8oz self-raising flour
Method:
Soak all the first 4 ingredients in a bowl in the fridge overnight. Then add 1 beaten egg to the above and mix thoroughly. Add 8oz self-raising flour and a pinch of salt. Bake in the oven 180c (gas mark 4) for 3/4 hour.
NUTS & CHERRIES CAN BE ADDED IN PLACE OF SOME OF THE SULTANAS OR MIXED FRUIT.
Microwave Mushroom Burgers - Serves 4
Ingredients:
1 lb. lean ground beef
1 (4 oz.) can sliced mushrooms
3 tbsp. finely chopped onion
3 tbsp. finely chopped chives
1 tsp. garlic salt
Dash of black pepper
1 egg
2 tbsp. butter
Hamburger buns
Lettuce, tomatoes and
pepper rings for garnish
Method: In a microwave dish combine the mushrooms, onions, chives, black pepper and garlic salt. Microwave on medium power for 3 minutes and allow this to stand for another 3 minutes for flavours to blend. Reserve some mushrooms for garnish. Combine the ground beef, mushroom mixture and egg and shape the mixture into 4 even patties. Place onto rack or pan and microwave at high power for about 2 minutes. Let stand for 2 minutes and then turn them over and then microwave on other side for 1 1/2 to 2 minutes or until done to your liking. Serve on hot buns and garnish with the remaining mushrooms, tomato slices, pepper rings and other condiments of
your liking.
