Personally, I am a huge fan of sweet potato. With summer on the way and diets starting, sweet potato seems to be on every restaurant menu as a healthier potato option.

Here are 5 different ways you can have your sweet potato:

Cut your sweet potato into chunks to resemble fries, depending on how skinny or chunky you like them. Pop them on a baking tray with a little oil and seasoning of your choice. Bake at 180 degrees for 30 minutes and enjoy.

Pop your potato in the oven sprinkled with a little salt and pepper, then pop it in the oven for about an hour.

Mix together sweet potato, peppers, garlic and a little flour to create burger patties. Fry them on either side till cooked.

Boil the sweet potato fully and blend ’till it’s a thick consistency.

Boil and mash – simple.

Add chickpeas to some boiled sweet potato and other vegetables you like. Roll into balls and bake till the outer layer is crispy.
