National Peanut Butter Day – Recipes


In celebration of National Peanut Butter Day (we don’t know where all these national days come from) we’ve found some awesome peanut butter recipes for you to try at home!

Peanut Butter Fudge
What’s better than regular fudge? Peanut butter fudge, of course!

What You’ll Need:

  • 125g of butter
  • 500g dark brown sugar
  • 120ml milk
  • 250g crunchy peanut butter
  • Vanilla pod
  • 300g icing sugar

Method:

You need to melt your butter in a saucepan over medium heat before stirring in your brown sugar and milk. Bring it to the boil and leave for 2-3 minutes without stirring before removing from the heat and stirring in your peanut butter and vanilla. In a large bowl, pour the hot butter and sugar mixture over your icing sugar and beat until smooth. Simply pour the mixture into a baking tray and then chill completely in the fridge. When ready to serve, cut into squares and store in an airtight container.

 

Peanut Butter Cookies

What You’ll Need:

  • 1 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 340g white sugar
  • 340g brown sugar
  • 2 eggs
  • 450g white flour
  • 1 tsp baking powder

Method:

Cream your butter, peanut butter, and sugars all together in a large bowl until a smooth buttery texture before beating in the eggs. Sift in your flour and baking powder into the butter mixture and mix. After chilling the dough for at least 30 minutes, roll your dough into 1 inch balls and flatten on a greased baking tray. Bake for 10 minutes in a preheated oven of 180 C fan.

 

Homemade Peanut Butter
You can’t celebrate National Peanut Butter Day without making your own peanut butter, right?

What You’ll Need:

  • 425g shelled and skinned roasted peanuts
  • 1 tsp kosher salt
  • 1 1/2 tsp honey
  • 1 1/2 peanut oil

Method:

Combine the salt, honey, and peanuts in a food processor for approximately 1 minute. Scrape down the sides of the bowl before continuing to process while slowly drizzling in the oil until the mixture is smooth. Store the peanut butter in an airtight container in the fridge for up to two months.
