It’s National Carrot Cake Day! Are you celebrating? If not, here are some delicious carrot cake recipes for you to try… YUM!


Carrot Cake Fudge

What you’ll need:

  • 4 cups of white chocolate chips
  • 1 cup of sweetened condensed milk
  • 2 1/2 tablespoons of carrot baby food
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg

Method:

1.) Melt the white chocolate chips and sweetened condensed milk together over low to medium heat. Stir often until the mixture is combined.

2.) Then add the carrot baby food, nutmeg and and cinnamon. Stir well.

3.) Line a tray with tin foil. Add the mixture to the tray and refrigerate overnight until set.

4.) Cut the fudge into even squares with a sharp knife.


Carrot Cake Smoothie

What you’ll need:

  • ¾ cup of milk
  • ¼ cup of non-fat plain Greek yogurt
  • 1 teaspoon of honey or pure maple syrup or 3 pitted dates
  • 3 medium carrots, trimmed, peeled and cut into chunks
  • ½ of a frozen banana
  • ⅛ cup of chopped walnuts
  • ½ teaspoon of ground cinnamon
  • pinch of ground nutmeg
  • shredded coconut for serving (optional)

Method:

1.) Add all of the ingredients listed above into a blender. Blend until smooth.

2.) Pour into glasses and top with shredded coconut.


Carrot Cake Doughnuts 

What you’ll need:

  • 1/2 cup of butter, preferably softened
  • 1 egg
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of vanilla
  • 2/3 cup of brown sugar
  • 2/3 cup of vanilla yogurt
  • 2/3 cup of crushed pineapple, drained (save juice!)
  • 2/3 cup shredded carrots
  • 2 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 1/2 teaspoon of baking powder
  • 1 1/2 teaspoon of baking soda
  • 2 cups of flour

Frosting:

  • 4 ounces of cream cheese
  • 4 tablespoons of butter
  • 2 teaspoons of pineapple juice
  • 3/4 cups of powdered sugar
  • 1/2 cups of chopped walnuts

Method:

1.) Cream the butter, sugar and salt in a large bowl. Add the egg and yogurt, beat until smooth! Then stir in the crushed pineapple and shredded carrots.

2.) Sift the flour, cinnamon, nutmeg, baking soda and baking powder and slowly beat into the mixture.

3.) Put the mixture into a sealable bag and cut the corner off. Squeeze into the doughnut pan, only filling each one half full.

4.) Bake the doughnuts at 375 degrees for about 10 minutes

Frosting:

1.) While the donuts are cooling, add the cream cheese, butter and pineapple juice. Stir well. Slowly add the powdered sugar until the mixture is smooth smooth. Dip the cooled donuts in frosting and sprinkle with chopped walnuts.
