It’s National Coconut Torte Day! ‘Torte’ meaning cake in German. Enjoy this day eating the delicious taste of this rich dessert. However, we’ve put together the best coconut recipes for you to try making your Monday more enjoyable.

Coconut Cake

What you’ll need

  • 225g of self-raising flour
  • pinch of salt
  • 115g of butter, cut into small pieces (plus extra for greasing)
  • 115g of demerara sugar
  • 100g of grated coconut (plus extra for sprinkling)
  • 2 eggs
  • 4 tablespoons of milk

Method

1.) Preheat the oven to 160 Degrees or 325 Fahrenheit. Grease a loaf tin and line with baking paper.

2.) Add the flour and salt into a mixing bowl. Rub in the butter with fingertips. Then stir in the sugar, coconut, eggs and milk.

3.) Spoon the mixture into the loaf tin and smooth the surface. Bake in the oven for 30 minutes.

4.) Remove the cake from the oven and sprinkle with the extra coconut. Bake for another 30 minutes until well risen and golden.

5.) Leave the cake to cool. Enjoy!

 

Raspberry Coconut Bars

What you’ll need

  • 340g of  graham cracker crumbs
  • 170g of butter, melted
  • 680g of flaked coconut
  • 1 can (14 ounces) of sweetened condensed milk
  • 340g of seedless raspberry preserves
  • 113g of cup chopped walnuts, toasted
  • 170g cup semisweet chocolate chips
  • 85g of cup white baking chocolate chips

Method

1.) In a small bowl, combine cracker crumbs and butter. Add the mixture into a greased baking tray. Sprinkle with coconut and drizzle with a dash of milk.

2.) Bake at 350 degrees for 20-25 minutes until light brown.

3.) Once cooled, spread raspberry preserves over the crust and sprinkle with walnuts.

4.) Melt chocolate chips in the microwave and drizzle over the walnuts. Repeat this with the white chocolate chips. Refrigerate until set and cut into small bars.

 

Coconut Brownies

What you’ll need

  • 1 package of fudge brownie mix
  • 340g of sour cream
  • 340g of coconut-pecan frosting
  • 2 large eggs
  • 85g of  water
  • 340g of semisweet chocolate chips

Method

1.) Preheat oven to 360 degrees. In a large bowl combine the brownie mix, sour cream, frosting, eggs and water. Stir until well combined.

2.) Pour the mixture into a baking tray and cook for 30-35 minutes. Leave to set and sprinkle with chocolate chips.
