What are tacos?

A taquito is a corn tortilla rolled up, stuffed with a tasty filling and then fried or baked. They were created in Southern California, although they can also be found in Mexico. Sometimes you will see tacos on menus as taquitos, rolled tacos or flautas.

Are tacos dorados the same as flautas?

Referring to flautas: the elongated, rolled and fried corn tortillas that have a myriad of fillings. The ones that resemble a flute (hence the name) are sometimes called taquitos and are part of the traditional category of fried tacos called tacos dorados.

What is the meaning of Tacos Dorados?

The meaning of this word is “Tacos Dorados” depending on where you are in Mexico you will also find it under the name of Flautas. It first appeared at the beginning of the 20th century in recipe books. Tacos Dorados are made from a rolled corn tortilla filled with chicken, meat or cheese and then fried until crispy.

Tacos Dorados are crispy tacos, usually made with corn tortillas. The tortillas are heated, filled with a small amount of minced meat or shredded chicken and fried. How to make crispy, grilled tacos dorados

They are one of the favourite dishes in all of Mexican cuisine. Like most tacos, they are very versatile! You can fill them with basically anything you like, such as shredded beef, chicken or go completely vegetarian. The key to get the best result is to have a good tortilla that you can manipulate, roll and fry without it falling apart.

Rice and beans tacos dorados recipe

Ingredients (10 tortillas)

To begin with, here are the ingredients you will need for the preparation of these delicious refried beans tacos, don’t miss the details.

  • 1 onion.
  • 1 garlic clove.
  • 1 can of ground beans.
  • 1 cup of Mahatma® White Rice previously cooked.
  • olive oil.
Preparation
  1. Start the preparation of the Mexican tacos by finely chopping the onion and the garlic clove, and once ready add them to a pan with hot olive oil and let them fry until the garlic turns golden brown.
  2. Then add the ground beans and the rice and let them fry together with the onion and garlic for three minutes with a pinch of garlic salt and a splash of milk, and stir again to integrate everything. Once ready, remove from the heat and set aside for a moment.
  3. Now take a corn tortilla and inside it place some refried beans. Roll the tortilla and thus form each of your tacos.
  4. In a frying pan, put enough oil and once hot, you are going to brown the tacos dorados. Change their position from time to time so that the whole taco is well browned.
  5. Once well browned, remove the tacos from the oil and place them on paper napkins to absorb the excess oil.

Two classic Mexican sauces to accompany your tacos dorados

Red sauce
Ingredients
  • 1 large or 2 small tomatoes.
  • 1/2 bell bell pepper or red bell bell pepper.
  • 1/2 onion.
  • 1 tablespoon chipotle chili.
  • Salt and pepper.
  • Olive oil.
Procedure
  1. Cut the vegetables and place in a roasting pan and bake in the oven with the chili, salt, pepper and a drizzle of olive oil.
  2. When they are ready, put them in the blender and grind until you have a homogeneous mixture.
Green sauce
Ingredients
  • 3 green chilies.
  • 1/2 bell bell pepper or green bell pepper.
  • 1 jalapeño bell pepper.
  • 5 green tomatoes.
  • 1/2 onion.
Procedure
  1. Put the bell pepper, onion, chili and tomatoes in a pan with a little olive oil and cover. When they are cooked, let them cool down.
  2. Put them in a blender and add salt and coriander to taste. Blend until a homogeneous mass is obtained.
